The Lemon Sole is widespread from the White Sea to the Bay of Biscay, including Icelandic waters and the North Sea. It is characterized by completely smooth skin and the side line is almost straight. Its body has an oval shape. The coloring is brownish with a variable number of light and dark spots. Its maximum length is around 45 cm, but it usually does not measure more than 30 cm. Its tender meat is lean and very tasty when fried in butter at a lower temperature or served poached.
