Meagre is very popular in France, where it is sold under the name Maigre. They are found from southern Norway to the African continent and also in the Mediterranean and occasionally in the Black Sea. It grows up to 2 m in length. A sign of freshness in this species is the yellow-orange coloring of the inner side of the oral cavity. Fragile and tender meat can be prepared in all possible ways, only spices should not be overdone so as not to suppress its delicate aroma.
