Rosemary is an evergreen woody shrub whose needles are used as a spice. Its refreshing taste is very aromatic with a hint of resin, reminiscent of eucalyptus, sharp and slightly bitter. It is added to veal, lamb, mutton and poultry, to baked fish or to tomato sauces. It adds a fresh taste to salads, stuffings, cheese dishes or pasta. It is also suitable for herb butter. Rosemary is an important part of Provençal seasoning.
