The Arctic char (Salvelinus alpinus), also known as the northern or alpine char, is a fascinating salmonid fish that holds the record as the northernmost freshwater fish in the world.
Occurrence and forms: It naturally inhabits the cold waters of the Arctic, Scandinavia, Iceland, as well as deep alpine lakes. There are two main forms: the migratory (anadromous) one, which migrates between the sea and rivers, and the lacustrine one, which remains in deep, cold lakes.
Appearance: It has a dark back (blue-green to brown) and lighter sides with pink to red spots. Unlike the more common American char, it lacks marbling on its back. During the spawning season, the abdomen of males turns a deep orange to red color.
Size: It usually grows to around 35 cm, but in ideal conditions it can reach up to 80 cm and weigh over 6 kg. Food: It is an undemanding predator. It feeds on plankton, insects, crustaceans and smaller fish.
Gastronomy: Its meat is highly prized, its color resembles salmon (light orange), but its texture and firmness are more like trout. It contains a high amount of healthy omega-3 fatty acids
