Vinification (production):
Pressure is 5 to 6 MPa. Before the second fermentation, 23 g of sugar per litre are added. The second fermentation lasts six to eight weeks at a temperature of 12° to 13° max. The sugar treatment further increases the alcohol content by about 1,5 %.
Tasting:
Intense yellow gold in colour, Crémant has a fine and persistent head. The nose is ripe and very expressive, with notes of pear and plum. It is elegant and silky. In the mouth it remains fresh and 'crisp', on the palate it is fleshy with lingering notes of ripe fruit. A very elegant wine and a great personality.
Pairing:
Crémant from Cave des Vignerons de Pfaffenheim is primarily a wine for celebrations, as an aperitif, or can be consumed at any time of the day.
Ideal to enjoy with seafood or Asian cuisine. Recommended with raw or grilled fish, but also with white meat. It will accompany soft cheeses. Crémant is ideal with strawberry soup, lemon tart, with clafoutis or kougelhopf.
Serving temperature: 7 or 8 °C
Ideal for serving during 2 to 3 years.
